It’s no surprise that January is the high income time for gyms, spas and nutritionists. Many of us spend the holidays expanding our waistlines and focusing on friends and family. My (Paleo) Meatloaf Brings All The Boys To The Yard

When I was a child I thought that meatloaf was a a gross hunk of meat loaded with fat, carbs and cholesterol and covered in ketchup; gross. As an adult, I’ve learned that meatloaf is one of the easiest dishes to make and be creative with. It can also be an excellent source of protein AND veggies. Oh, and did I mention it’s comforting and delicious?

Moving from Vermont back into civilization to the outskirts of Boston makes it harder to stick to that healthy diet I was used to when I was surrounded by farms instead of fast food.
